Hello Foodies!
Today we are making cookies, the simplest and quickest snack you can ever decide to make. I personally enjoy these because you just cant go wrong with them. These delicious treats come out crunchy and sweet you wont have enough. I went ahead and made them in as much of a basic way as you can make them and they could just be the thing you need in your life to change your bread-fast habits.
Now, the cookie ingredients vary from Chef to Chef. I like the idea of using 2 cups of flour (you may be tempted to stop at 1) because it neutralizes all that margarine and sugar... Yes, I know, I should have used butter but let's face it, margarine is healthier and cheaper so I'm using it. Also, some people 'frown upon' the idea of using eggs in cookies, actually, most recipes don't have eggs; and I say to those people that you need that protein in your recipe. I also added a bit of coloring to my dough because you know you need that bit of color to lighten you up!
So let's get into it.
Prep & Cook time, 30mins.
Pre-heat Oven to 180.
Ingredients
2 Cups Flour
3/4 Cup Margarine (Blue Band Original works great)
1/2 Cup Sugar
1 egg
1/2 tsp Vanilla Essence (Festival)
A fingertip of Strawberry Coloring (Festival)
How to
As you would with a cake, start by blending all of the Margarine with all of the sugar. The idea is to get rid of large sugar particles and have that nice almost fluffy blend.
I like to add my color at this point because it just makes sense.
Add your eggs and vanilla and keep whisking, the mixture should have turned soggy-ish at this point.
Add in your flour cup by cup, whisking the first in then introducing the second after the first is fully incorporated.
Form a dough-like that peels away from the sides and pat it down on a flat surface.
Divide into fours, take the first quarter and divide into equal balls as per your judgement. Do the same for the other three quarters.
With all balls on the working surface, press them down with the base of a glass or cup just enough that they flatten without cracking on the ends.
I like to apply the same margarine on my baking tray but you can use Parchment Paper if you have any and arrange your cookies spacing them just enough.
Bake for 15 to 18 minutes or until they turn golden brown (start checking at 10).
Allow them to cool then enjoy!
Ps. You can have this dough ready in your fridge, take it out in the morning and divide and throw in the oven and they should be done before you get out of the shower. Also, your house will get this amazing aroma.
